to take a break from cleaning and packing, i made red velvet cupcakes for a shindig i'll be attending tonight. well, i TRIED to make red velvet cupcakes. despite usinf twice as much food coloring as last time, they are still not the shade of red i was hoping for.
does anyone have a red velvet recipe that actually comes out red???
of course they still taste good, but really, there's no point without the color!
i don't have any direct experience. but here's Cake Man Raven's recipe.( i saw him on food network and the batter for this cake was alarmingly red.)

I once made cupcakes using a red velvet cake mix (out of a box) and oh my god, the batter was the color of melted lipstick. I bet they used a LOT of food coloring in that mix.

ReplyDeletethere actually are some natural food colorings. i'm not sure what they're made of but they sell 'em at Whole Foods.
ReplyDeletei'm pretty sure red m&ms weren't introduced until my own childhood, so i too remember the taboo against red foods.
ReplyDeletei wonder how red the natural dyes are! unfortunately, there are no whole foods in tallahassee (there is some other organic market i can try, if i decide to try one more red velvet experiment).
you know . . . i just ate a leftover cupcake and it was pretty red, actually. maybe it takes a day (or better lighting).
