to take a break from cleaning and packing, i made red velvet cupcakes for a shindig i'll be attending tonight. well, i TRIED to make red velvet cupcakes. despite usinf twice as much food coloring as last time, they are still not the shade of red i was hoping for.

does anyone have a red velvet recipe that actually comes out red???

of course they still taste good, but really, there's no point without the color!

i don't have any direct experience. but here's Cake Man Raven's recipe.( i saw him on food network and the batter for this cake was alarmingly red.)

georg and lisa--wow, i really should be putting way more food coloring in! and yet it seems so . . . unnatural.

lisa b--of course you're right, and i've eaten several of these already. :)

I once made cupcakes using a red velvet cake mix (out of a box) and oh my god, the batter was the color of melted lipstick. I bet they used a LOT of food coloring in that mix.

yeah, i think i'm going to give up on getting a really really red velvet for now . . .

there actually are some natural food colorings. i'm not sure what they're made of but they sell 'em at Whole Foods.

i'm pretty sure red m&ms weren't introduced until my own childhood, so i too remember the taboo against red foods.

i wonder how red the natural dyes are! unfortunately, there are no whole foods in tallahassee (there is some other organic market i can try, if i decide to try one more red velvet experiment).

you know . . . i just ate a leftover cupcake and it was pretty red, actually. maybe it takes a day (or better lighting).
